Single Serving Pavlova

Pavlova is New Zealand's national favorite dessert and these miniature versions were made to share with students at the sixth grade "Country Report Banquet". Dollops of slow-baked meringues are topped with whipped cream, kiwi, pineapple, grapes and papaya.

Here is a recipe for Pavlova! We had a couple different ones, but they are all fairly similar. Use room temperature egg whites and think "slow and patient" on baking those meringues. It took us a few tries to get it right. I baked these about an hour at 225˚ on a greased baking sheet and then let them cool all the way down in the oven before we finished them with toppings. Think hours, but worth it. Plan accordingly. :P

And don't they look like Ms. Pavlova?
Well, if she were wearing a kiwifruit hat... :D

Btw, Pavlova is GLUTEN FREE!
